Best budget RAM to pair with an RTX 3060?

So i finally managed to snag an RTX 3060 for a decent price last week but now im staring at my old single 8gb stick of ram and realizing i really need an upgrade to actually get any performance out of this thing. Im trying to finish this build by next weekend because my brother is coming over and we wanted to play some stuff together.

I'm on a pretty tight budget though maybe around 60 quid or so since the GPU took most of my savings. I've been looking around and its honestly kind of overwhelming how many options there are for something that should be simple. I did some digging and saw everyone recommends the Corsair Vengeance LPX 16gb kits because they are cheap and reliable but then I saw a bunch of threads saying that the actual chips inside are basically a lottery and you might get something that doesnt hit its rated speeds on a Ryzen system.

Im running a Ryzen 5 5600x on a b550 board and i heard ryzen is super picky with memory speeds. I keep seeing people argue about whether 3200mhz cl16 is better than 3600mhz cl18 for a mid-range card like the 3060. Does it even make a noticeable difference if im mostly just gaming at 1080p? I also looked at the G.Skill Ripjaws V but they look a bit tall and im worried they wont fit under my air cooler which is a bit chunky.

I play a lot of open world stuff like Cyberpunk and sometimes I have discord and a bunch of chrome tabs open in the background so i dont know if i should stretch for 32gb or if that is just overkill for a 3060 build. People say 16gb is fine but then others say modern games are starting to eat that up fast especially with stuff running in the back.

Given that im trying to stay under that 60-70 pound mark and want something stable that just works without me having to mess around in the bios too much besides turning on xmp what would you guys actually put in this build? I just want the best bang for buck that wont bottleneck my card...
